This is an oldie but a goodie.
France en Velo: The Ultimate Cycle Journey from Channel to Med - St Malo to Nice by John Walsh and Hannah Reynolds has done the work for you in planning a north-south bike route in France.
The book was originally published in 2014 but it remains a useful route-planner for cyclists looking for inspiration for a north-south cycle tour of France.
It combines travel writing style with guidebook info (where to stay, what to see etc) as it retraces the authors' journey across the country.
The book is still available from Stanfords Travel Bookshop.
